Use your coconut! Ateneo offers course on coco oil
The Ateneo de Manila University is offering a special course on coconut oil for the second semester.
The course, titled “Coconut Oil: From Its Chemistry to Health Properties,” will be taught by Dr. Fabian Dayrit, a renowned chemist in the field.
According to a post on ADMU’s Chemistry Department’s Facebook page, the course is a special elective for undergraduate and graduate students, though non-students can sit in at the lectures.
The course description states that students will be introduced to “various fats and oils, and differentiate the various vegetable oils and animal fats, highlighting the unique characteristics of coconut oil as a functional food.”
Among the topics that will be discussed in the course are the coconut’s history, the chemistry of coconut oil, the cocochemical industry, and health issues involving coconut oil.
Dayrit is the current president of the Integrated Chemists of the Philippines and the chairman of the Asian and Pacific Coconut Community’s Scientific Advisory Committee for Health.
